For enthusiasts of refined tastes, the Duck course delves into various techniques from butchery to curing and cooking, ensuring every part of the duck is utilised. The Salami/Chorizo course offers a journey through the art of blending, curing, sausage stuffing, and fermenting to create distinct flavours. Alternatively, the Bacon course provides an opportunity to work with heritage breed meats, mastering the production of classic salami and bacon.
Each course is complemented by coffee and canapés and a delicious tasting lunch featuring the charcuterie prepared during the session. Moreover, participants will have the joy of taking home the charcuterie they craft, with salami and chorizo delicacies conveniently posted to you once ready.
The experience extends beyond the kitchen to the lush greens of Huntswood Golf Club, where you can choose between a relaxing 9 or a challenging 18 holes. Equipment is available for hire, ensuring a seamless day of golf regardless of skill level. Afterwards, unwind at the club's licensed bar and enjoy the breathtaking panoramic views of the Buckinghamshire countryside.Â

The charcuterie experience is available on Thursdays and Saturdays.
Timings: 10am to 2pm.
The curing class takes place in the morning followed by a delicious lunch.

The centres contracted with us hold public liability insurance. We also hold contingency liability cover. You will not be liable for accidental damage to equipment, except where damage has been caused as a result of recklessness or wilful negligence.

What happens on the charcuterie course?
You have a choice of 3 different charcuterie courses. On each course you'll make products to take home with you. With regards to the salami, this will be posted to you once it is ready.
Duck -Â Explore different charcuterie techniques to use every part of the duck, from butchery to curing and cooking.Â
Salami/chorizo -Â Takes you from butchery, to blending your own salami or chorizo, curing, sausage stuffing and fermenting.
Bacon -Â Sees you working from butchered cuts of heritage breed meat, to classic salami and bacon production.
As part of each course, you'll enjoy coffee and canapés, as well as a charcuterie tasting lunch where you can sample examples of the charcuterie you will have made.
About the golf
Choose from either 9 or 18 holes of golf at the Huntswood Golf Club, an easy walk from the charcuterie factory.
Equipment can be hired on the day directly from the golf club.
