Whether your choice is the robust flavours of venison or the distinctive taste of hogget, this experience offers a unique opportunity to delve into the art of butchery and charcuterie, all within the space of a half-day course.

Hosted in a professional kitchen, the experience begins with a guided tour, setting the stage for a hands-on journey into meat preparation and preservation. Under the expert guidance of a Master Butcher, participants will learn to skillfully butcher a whole animal, be it the elegant wild venison or the richly flavoured hogget. Each participant will tie, marinade, and prepare prime cuts like canon, loin, rack, or chops, perfectly setting them up for frying or roasting.

The creativity continues as you craft your own sausages from scratch and explore various curing techniques taught by a Head Charcutier. Whether it's crafting hogget bresaola or venison salami, the skills learnt here will serve you for a lifetime. The highlight of the course is the making of your very own charcuterie, which will be carefully cured in controlled conditions and posted to you upon perfect maturation.

No culinary course is complete without a tasting, and this experience includes coffee and canapés followed by a delectable lunch featuring charcuterie made from the meat you’ve chosen to work with. Leave not just with new skills and knowledge, but also with your own butchered cuts and handmade sausages, ready to cook and enjoy at home.

This experience is perfect for anyone with a love of artisan food craft, eager to enhance their culinary capabilities.

Important Information

The gift recipient can choose which course they would like to do (venison or hogget) when they book in with the supplier.

This experience is available on Thursdays and Saturdays.

Timings: 10am to 2pm.

The curing class takes place in the morning followed by a delicious lunch.

Your voucher is valid for 12 Months from the date of issue.

Please note you must have booked and taken your experience before the expiry date.

The centres contracted with us hold public liability insurance. We also hold contingency liability cover. You will not be liable for accidental damage to equipment, except where damage has been caused as a result of recklessness or wilful negligence.

A cancellation indemnity, subject to terms, is included with every voucher.
